Once a check is signed off, it is cryptographically locked. Changes are recorded as new entries, preserving the full history for inspectors.

Why this matters on inspection day
Records are only useful if an inspector can trust them. On paper, a week of temperatures can be filled in from memory on a Friday and nobody can tell. In LogBooks Hub each entry carries the name of the person who made it and the time it was made. Once a check is signed off it is locked: a correction is saved as a new entry, so the original and the change both stay visible.
That history is what goes into your audit pack. It shows not just that checks were done, but when, by whom, and what happened when something went wrong.
Your data, handled carefully
